All our ciders are made from fresh apple juice. Our apples come from a variety of sources – whether our own 2000 trees or from a selection of handpicked orchards around Cornwall. Most of the juice goes into the main blend but some is kept aside to make our limited edition ciders. Whilst not registered organic, we keep any artificial interference to a minimum with the only additive being a touch of sulphur to stop the cider oxidising.

Each year some of the apples we press have just the right qualities to make our whole fruit apple juice. A special blend of apple varieties gives us a naturally sweet taste with a nice crisp bite. A little vitamin C is added and it is then gently pasteurized to keep it fresh. We aim to have the juice bottled within 48 hours of pressing for a truly natural taste.
With no added preservatives, our vinegar is exactly as nature intended – unfiltered, raw and unpasteurised so that it retains the active “mother” element; the natural living enzyme which develops during the secondary fermentation when bacteria convert the cider alcohol to acetic acid. We treat this vinegar carefully, hand-filling each bottle but these strand-like protein molecules are harmless but can be filtered out if preferred.
